One of my favourite winter recipes – serves 4
- 2 large sweet potatoes
- 1 onion
- 1 birds eye chilli or to taste!
- 1 pint of vegetable stock or enough to cover chopped sweet potatoes.
- slice onion
- peel and chop sweet potato into even chunks
- finely chop chilli
- cover with stock and season
- bring to the boil and simmer until sweet potato is soft
- cool slightly then blitz
